Canned - 1 can garbanzo beans - remove skins by rubbing with hands and rinsing in water (or not)
Cooked - Soak 1C garbanzo beans for 12 hours. Simmer covered for 4? hours - remove skins
2C garbanzo beans (above)
1/2 cup tahini
1 large lemon - juiced
2 cloves garlic - crushed
1 tsp kosher salt
1/2 tsp. ground cumin
dash cayenne pepper
10 cranks freshly ground black pepper
2 Tbl olive oil
2 Tbl water
Combine all ingredients in a food processor until smooth.
